2週間くらい本当に寝れなくて

I really haven't been able to sleep for about two weeks.

全然苦闘点が打てないというか

I can't hit any points of struggle at all.

ひたすら大きな時間が横たわっている中で

生きている感じがちょっと辛かったですね

相手の人が喋りたい話を

とにかく喋ってもらうっていうことに徹するっていうか

鹿児島県市木久敷の市にあるレストラン

A restaurant in Ichikikushikino City, Kagoshima Prefecture.

土着の店主島田博之です

I am the local shop owner, Hiroyuki Shimada.

自然農で栽培している農家から仕入れた野菜など

Vegetables sourced from farmers cultivating using natural farming methods.

その土地ならではの土着の食材のみを扱い

Only handling local ingredients unique to the land.

土器や枝や薪を用いた料理を提供しております

We offer dishes cooked using pottery, branches, and firewood.

9月初旬ということで

Since it's early September.

夏だけではなく

Not just in summer.

秋もおいしい茄子を取り上げたいと思います

I would like to highlight delicious eggplants in autumn.

地味深い味が特徴の茄子

Eggplant with a rich and subtle flavor.

実はたくさんの品種が日本にあるんです

In fact, there are many varieties in Japan.

黒紫のものも多いですが

There are many things that are dark purple as well.

中には白いものも

Some of them are white.

形も丸型長型などいろいろあります

There are various shapes such as round and long types.

地野菜も多く

There are many local vegetables.

京都の鴨茄子をはじめ

Starting with Kyoto's duck eggplant

私の出身地である

My hometown is

埼玉の新居町にある

It is in the new housing area of Saitama.

新黒茄子、青茄子

New black eggplant, blue eggplant.

新潟だけでも20種類ほどの茄子を栽培しているそうです

It is said that about 20 varieties of eggplant are cultivated just in Niigata.

これだけ多様な茄子ですが

There are so many varieties of eggplants.

もともとインドが原産

Originally from India.

中国を経由して日本に入り

Entering Japan via China.

奈良時代に食べられていたという記録も残っています

There are also records that it was eaten during the Nara period.

地域の路地栽培や

Local alley cultivation and

近所の農家さんが無農薬で育てた茄子を使った

I used eggplant grown pesticide-free by a local farmer.

この季節ならではの食べ方を紹介します

I will introduce a unique way to eat that is specific to this season.

まずはこの茄子を使ってみます

First, I'll try using this eggplant.

まずは揚げ茄子

First, fried eggplant.

包丁も入れずに揚げてしまいます

It will be deep-fried without even cutting it.

丸ごと揚がったら塩をつけてそのままかじる

Once it's completely fried, sprinkle some salt on it and just bite into it as it is.

茄子と油の汁がじわっと口に広がります

The juice of eggplant and oil gently spreads in my mouth.

たくさん作って揚げ浸しにしても美味しいです

Making a lot and soaking them in tempura sauce is also delicious.

シソやバジルなどと合わせた塩や

Salt combined with shiso and basil.

味噌などと一緒に食べるのもいいですね

It's also nice to eat it with miso and such.

もう一つは漬物です

The other one is pickles.

ぬか漬け味噌漬けの定番もおすすめですが

While traditional flavors like nukazuke and misozuke are also recommended,

中でも僕は海水漬けをおすすめします

Among them, I particularly recommend the seawater pickling.

茄子の揚くと海水の苦いの相性がとても良いと思います

I think the combination of fried eggplant and the bitterness of seawater goes very well together.

海水は漬かるのが遅いので

Since seawater takes time to soak.

物にもよりますが5日から2週間ぐらいを漬けるのがおすすめです

It depends on the item, but it is recommended to marinate for about 5 days to 2 weeks.

まだ暑さの残るこの季節

This season still holds onto the remnants of heat.

旬の野菜とともに乗り切りましょう

Let's get through it with seasonal vegetables.

自分で企画するときもあるし

There are times when I plan it by myself.

人のお話を聞くお仕事もあるしという感じで

It feels like there are jobs where you listen to other people's stories as well.

いろいろ重なる部分が多かったので

There were many overlapping aspects.

本当になんか学びになりましたし
