コンビニに行けば大手メーカーのビールが数百円で買えるこの時代

In this era, you can buy major brand beers for a few hundred yen at convenience stores.

クラフトビールでも安いものはワンコイン 高くても800円ぐらいですよね

Even inexpensive craft beer can be found for around 500 yen, and even the pricey ones are about 800 yen or so.

そんな中で3本5000円という贅沢なビールを発売し 完売させ大きな話題となったクラフトビールメーカーがあります

Amidst this, there is a craft beer maker that released a luxurious beer priced at 5,000 yen for three bottles, which became a hot topic and sold out.

それが川崎に佇む東海道ビール川崎塾工場

That is the Tōkaidō Beer Kawasaki Brewery standing in Kawasaki.

この醸造所の醸造技師を務めるのは田上聡さん

The brewing engineer at this brewery is Satoe Tagami.

やっぱりビールって地位が低いですよね

Beer really has a low status, doesn't it?

同じ発泡でもシャンパンは高いですよね

Even though it's the same sparkling wine, champagne is expensive, isn't it?

シャンパンは高級料理店でも出せるお酒でビールは違う

全ての始まりは今からおよそ15年前に遡ります

The beginning of everything dates back to about 15 years ago.

大学卒業後塾の講師として物理や数学を教えていた田上さん

After graduating from university, Mr. Taga worked as a tutor teaching physics and mathematics.

クラフトビールの世界に足を踏み入れるようになったのは

I started to step into the world of craft beer.

ある一本のビールがきっかけでした

It all started with a single beer.

メジロの酒屋でですね

At the Mejiro liquor store, you see.

そのシメイという教会で作っているビールがあるんですけど

There is a beer being made at that church called Shimei.

それそのシメイの5年熟成させたものをそこで売っていたんですよね

They were selling the 5-year aged version of that brand there, right?

今思うとすごくリーズナブルな価格で売っていただいたんですが

Looking back now, I realize that you sold it to me at a very reasonable price.

それを最初に買って

Buy that first.

複雑な香りが全部まとまって最高に調和したような

It feels like a complex aroma has all come together in perfect harmony.

それはもう完全にまろやかな形で調和したという

It has completely achieved a harmonious form in a mellow way.

そういうものでしたね

いやーもうとりあえずもう言葉が出ないというか

Well, I just don't have any words to say right now.

もう本当にじっくりじっくり

今まで味わったことのないビールの味に感動した田上さん

Mr. Tange was impressed by the taste of the beer he had never experienced before.

しかしここからすぐにビール職人に転身したわけではありませんでした

However, I did not immediately become a brewer from here.

その後もしばらくは塾の講師を続けていたといいます

It is said that he continued to work as a tutor for a while after that.

まあ正直言ってものすごく割のいい仕事なんで

Well, to be honest, it's a really well-paying job.

まあその頃はお金もあったし

すごい遊べたし

I had a great time playing.

それはすごい楽しかったんですけど

教師っていう職業に悩んでたっていうのはありますね

I have been struggling with the profession of being a teacher.

教えるっていうこと自体はさほど好きではなかったんですね

I didn't particularly like teaching itself.

そういう悩みがある中で

仕事帰りには世界中のビールを買い漁り

After work, I hunt for beers from around the world.

長期休みにはクラストビールを求めて海外旅行に出かけるように

During long holidays, I tend to go abroad in search of craft beer.

そういった中でビールの作り手になりたいという思いが

Amidst such circumstances, the desire to become a brewer of beer arose.

ふつふつと分け合ってきました

We've been sharing little by little.

沸き上がってきたといいます

It is said to have bubbled up.

そして2015年のある日のこと

And then, on a certain day in 2015.

なんかきっかけがあったとかじゃないですね

It's not like there was a particular trigger or anything.

普通に横浜で授業をやって

Regularly have classes in Yokohama.

授業後飲んで

結局朝まで飲んでたんですけど

In the end, we drank until morning.

その後朝の街とかに放り出されたときは

ちょっとやっぱりセンチメンタルな気分になったりしますよね

I guess it makes you feel a little sentimental, doesn't it?

私横浜出身なんですけど

I’m from Yokohama.

高校生の時とか遊んだような街をですね

It's the kind of city where we used to play when we were in high school.

誰もいない中ですよね

It's when there is no one around, right?

もう明け方

It's already dawn.

ぷらぷらと歩いてて

Strolling aimlessly.

なんか落ち込んでたとか

I was feeling kind of down or something.

そういう感情ではないんですけど

It's not that kind of feeling.

空見ながら歩いて

自暴自棄とかではないですけど

まあ自分のやろうとしていたことが

Well, what I was trying to do is...

売れやすいビールを売ろうとしていたことではないんで

It wasn't about trying to sell easily sellable beer.

まあその後に

何らかの破滅は待ってるだろうなというのは

I guess some kind of destruction is waiting.

もう予想はしてましたね

I was already expecting it.

正直勇気じゃなくて

It's not really courage.

もうどうでもいいんですよね

業務用の機材を通信販売で買ったりとか

I bought commercial equipment through mail order.

そういうので

それを組み立てて作りましたね

DIYなどを駆使して出来上がったのは

What was created using techniques such as DIY is

9畳ほどの小さな醸造所

A small brewery of about 9 tatami mats.

1回で醸造できるビールは150リットルと

The beer that can be brewed at one time is 150 liters.

小ぶりながらも十分な醸造量を

A modest amount, yet sufficient for brewing.

確保することができました

I was able to secure it.

これで自分の作りたいビールを

With this, I want to make my own beer.

思う存分作ることができると思いきや

I thought I could create to my heart's content, but...

肝心の醸造免許が下りないのです

The crucial brewing license has not been granted.

その時やっぱり一人で工場を建てて

At that time, I thought about building the factory alone after all.

運営してっていうのが前例がなかったんですよね

There was no precedent for saying to manage it.

で特に

especially

僕の場合は一人で工場を立ち上げて

In my case, I started up a factory by myself.

やれるんだぞっていうのを示したかったんで

I wanted to show that I can do it.

法人とかも作らなかったんですよね

I didn't even create a corporation or anything like that.

個人事業主で挑んだんですが

I took it on as a sole proprietor.

まあそういうのが前例がなかったみたいで

Well, it seems that there hasn't been a precedent for that.

もうその免許を出す側からは

It's no longer from the side that issues that license.

強烈な拒否反応を受けましたね

I received a strong rejection response.

例えばじゃあ今週中に審査が通るかどうか

For example, whether it will be approved by the end of this week.

連絡しますのでって言われるわけですよね

I was told that they would get in touch with me.

でその週の間

During that week.

どんだけ待っても連絡は来ないんですよね

No matter how long I wait, I just don't get any contact.

で週末に入っちゃって

It fell into the weekend.

で月曜日に連絡するんですよ

I'll contact you on Monday.

連絡来るって言ってたんですけど来なかったんですよ

They said they would contact me, but I haven't heard from them.

で言うとまた

If I say it again,

ああすいませんじゃあ今週中に連絡します

Ah, I'm sorry. Then I'll contact you sometime this week.

って言ってその週も連絡来ないんですよね

They said that, but I haven't heard from them that week either.

免許の要件として

As a requirement for the license.

全部要件はもう満たし済みですね

All the requirements have been fulfilled already, right?

満たした上で免許が

A license obtained after fulfilling the requirements.

まあダメとも言えないんですよね

Well, I can't really say it's a bad thing.

要件を満たしてるんで何も言われない

Since I meet the requirements, no one says anything.

ただ免許は出さない

I just won't issue the license.

そういう抵抗ですね

That's the kind of resistance.

来週また来週と期日を引き延ばされ

Next week, then the week after next, the deadline keeps being postponed.

3ヶ月4ヶ月と何もできないまま

Unable to do anything for three or four months.

時間はどんどんと過ぎ去っていきます

Time keeps passing by quickly.

待てど暮らせど醸造許可はおりません

No matter how long I wait, the brewing permit has not been granted.

無理だよと

It's impossible.

冷静に考えてアドバイスすれば

If you think about it calmly and give advice.

確かに僕でもそう言いますよね

Certainly, even I would say that.

で僕自身無理だと思ってましたからね

I thought it was impossible for me, too.

まあビール工場の免許がおりないとは

Well, I didn't expect to be denied a license for the brewery.

思ってませんでしたけど

I didn't think so.

まあ2、3年やって破滅でもそれでいいかなと

Well, I think it's fine to just do it for 2 or 3 years and then face ruin.

いう考え方はありましたから

There was such a way of thinking.

最終的に醸造免許がおりるまで

Until the brewing license is finally granted.

およそ10ヶ月の月日を費やしたといいます

It is said that it took about 10 months.

もう本当しつこくやるしかなかったですよね

It really was necessary to keep pestering, wasn't it?

で次の週また電話するんですよね

So you'll call again next week, right?

連絡来なかったんですけど

I didn't get any contact.

まあそれをいくらでも繰り返せるかですよね

まあ本当に粘りがちです

ようやく酒造免許の取得に成功

Finally succeeded in obtaining the sake brewing license.

たった9畳の醸造所を川崎にオープンしました

We opened a 9-tatami mat brewery in Kawasaki.

このお店を田上さんは

Mr. Tagami this store

風上爆酒製造と名付けました

I named it "Uphill Brewing."

風の上で風上ですね

It's upwind on the wind.

まあその風上という意味自体が

Well, the meaning of that phrase itself is...

風の吹いてくる方向を指しますよね

It points in the direction from which the wind is blowing, right?

結局ビール業界に風を吹かせたいなという

In the end, I want to bring about change in the beer industry.

風が生まれるそういう方向というか

It seems like that direction is where the wind is born.

そういうビール会社になりたいなという思いですね

I want to be a beer company like that.

立ち上げ早々

Right after the launch.

万人受けするビールは作らないと宣言

"We declare that we will not create a beer that appeals to everyone."

以来個性的なビールを次々発表していきました

Since then, they have been announcing distinctive beers one after another.

フラッグシックビールは黒ビールの一種であるポーターを採用しています

Flagship Beer uses a type of dark beer called porter.

メインとしてはクローブというスパイスを入れていて

The main ingredient used is a spice called clove.

他にもいろんなハーブを入れたりして味を整えているんですが

I'm also adding various herbs to adjust the flavor.

クローブの香りを知らないと何とも説明し難いんですが

It's hard to explain if you've never experienced the scent of cloves.

スーッとするような香りというか

It's a refreshing, almost soothing scent.

だいぶ独特で強い香りがあって

It has a quite unique and strong aroma.

それがもううちの看板商品だったんですけど

That was already our flagship product.

アルコール度数も9度ありましたし

It also had an alcohol content of 9 degrees.

いろんな意味で相当強いビールでしたね

It was a quite strong beer in many ways.

ビールのレシピはあえてバランスを崩し

The beer recipe intentionally disrupts the balance.

個性を前面に打ち出していきました

I have put my personality front and center.

実際のクローブの使い方でいっても

Speaking of the actual usage of cloves...

10が一番バランス取れる分量だなと思っても

I think 10 is the most balanced amount.

あえて10に入れたりとか

Deliberately putting it into 10 or something like that.

2日漬け込むぐらいが一番ちょうどいいバランスだなと思っても

I think soaking it for about two days is the perfect balance.

そういうビールっていう認識の幅を広げたいっていう思いで

I have a desire to broaden the understanding of what such beer is.

ドギツイのを作ってましたね

You were making something intense.

そしてこのビールを無意識の承認と名付けました

And I named this beer "Unconscious Approval."

なんだこれっていう

What is this?

とりあえず一口飲んだら拒否反応が出ると思ったんですよね

I thought that if I took a sip for now, I would have a rejection reaction.

なんだこれって思いながらもまた二口目が欲しくなるというか

Even though I'm thinking, "What is this?" I still want a second bite.

そういう無意識領域で承認を受けられるビールなんじゃないかなと

I think it's a beer that can receive approval in that subconscious realm.

意識的には拒否してしまうけど

I consciously reject it, but...

無意識的にまた欲しくなるような

Something that makes you unconsciously want it again.

そんなビールをと思って作ってますね

I'm making it with the thought of such beer in mind.

実際その通りになったと思ってますね

I actually think it turned out just like that.

正直言って自分の思ったよりも愛されたなと思ってます

To be honest, I feel like I was loved more than I thought I would be.

もっと拒否されると思ってましたからね

I thought I would be rejected more.

そんな個性的なビールは万人受けはせずとも

Such a unique beer may not be universally appealing, but...

着々とファンを増やしていきました

Gradually, we have been increasing our fans.

店頭での販売はもちろん近隣のビアパブでも人気に

Sales at the store are of course popular at nearby beer pubs as well.

ついには

Finally

全国に出荷するようになりました

We have started shipping nationwide.

忙しかったですね

It was busy, wasn't it?

特に一人でやった時は

Especially when I did it alone.

もうほとんど寝てないですよね
